Corn Avocado Salad – Using NatureSeal Guacamole/Avocado formula on avocados
Ingredients:
1 can (15 oz) black bean, drained and rinsed
1 can (15 oz) white shoepeg corn, drained
1 cup halved cherry tomatoes
1 avocado*, (chopped and prepped with NatureSeal G&A formula)
¼ c. finely chopped red onion
Chopped jalapeno pepper to taste
¼ c. finely chopped cilantro
1 TBS. olive oil
1 TBS. fresh lemon juice
1 TBS. fresh lime juice
1 clove garlic minced (or pressed)
Salt to taste
Directions:
- Combine beans, corn, tomatoes, avocado, red onion, jalapeno, and cilantro in bowl. Stir to combine.
- In separate bowl, combine olive oil, lemon & lime juices, garlic and salt.
- Pour over salad and stir. Refrigerate until ready to serve
