The center-plate trend began in foodservice as, ““An entirely new vegetable-centric menu that holds vegetables to the same high regard once solely reserved for meat, fish and poultry is becoming increasingly popular in commercial kitchens around the country,” says Gerry Ludwig, consulting chef at Gordon Foodservice, a Markon member company.” With the more recent trends featuring meal bowls, it’s easy to incorporate a variety of fruits and vegetables and even make healthier ingredient swaps, like the famous Caulirice (rice made from cauliflower).
